Papa, Chef John Evalet, was a member of the Chaines des Rotisseurs, an order of chefs that goes back to 1248 in France. He was ordained by President De Gaulles Paris in 1958. He worked in Tokyo and Hong Kong in the early 70s then finally moved to Chiang Mai as the first executive chef for the restaurant Le Coq d’Or when it first opened on Tha Pae Gate.
